Description:water soluble, blue granules or powder
Properties:
Bright blue, transparent, with fluorescence characteristic, unstable in heat and precipitated under PH 4.5 because of the protein bonding pigment. Unstable in light.
Application:
Ice cream, jelly, confectionary,juice and beverage, cheese and darily products, noodles, Can be also used for cosmetics, tablet, capsule and feedstuffs.
Usage:
Usually 0.05%~0.2% as required in normal production.
Precaution:
Because spirulina blue color is not very stable to heat, acid and alcohol, it will be better to add after the product is cooled down to lower than 60C and after adding acid and alcohol, Better to add them at the end of the process.
