Properties:
White crystal with acetic acid odor; easy to absorb moisture; very easy to dissolve in the water,alcohol and fats; to decompose when heated to higher than 150°C.

Antibacterial principle:
Sodium diacetate is a molecular compound, with 39% of free acetic acid molecule.It can strongly penetrate into noxious bacteria and mildew wall,aim to change the nature of them.By the interference of the interaction of enzymes between cells,so as to inhibiting or destroying the growth and reproduction of bacteria.The free acetic acid molecule play an important role in the production, non-dissociate acetic acid is more efficient than the free acetic acid.
Antibacterial area:
As a preservative,it has an inhibited effect to aspergillus flavus,aspergillus fumigatu and aspergillus niger;it is also inhibited to E. coli,Listeria and Gram-negative bacteria;but it is does not work for Lactic acid bacteria and yeast.
Characteristics:
As a green food additives,it is antisepsis,rot resistance,fresh-keeping and oxidation resistance;it can also used as pharmaceutical Intermediates, multiple valence ion integrated agent, conditioner and electroplating additives etc.
Applied range:
Use as flavoring, soy products, meat products, pastries, grease, foodstuffs and feed in food grade products.
