Brewing enzyme of glucoamylase is obtained from the controlled fermentation on a commercial scale, the glucoamylase preparation can be widely used for the industrial production of crystalline D-glucose, high fructose corn syrups, wine, ethanol, beer, and in other fermentation processes.

2. Ethanol Enzyme Of Thermostable Amylase
Brewing Enzyme of Alpha-amylases (Amzyme-HT) is a class of thermostable enzyme preparation, which provide with good tolerance to high temperature and it is widely used in the manufacture of starch sugar (glucose, malt syrup, dextrins, oligosaccharides) and brewery, alcohol, glutamate etc.

One unit of Alpha-amylases activity (U) is defined as the the amount of enzyme which needed to hydrolyze 1 mg of starch in one minute at PH 6.0 and temperature of 70 centigrade

3. Using Process of the Alpha Amylase And Glucoamylase
Both of the Alpha-Amylase (Amzyme-HT) and Glucoamylase (Gluzyme-BI) can work together to hydrolyze starch to glucose with the good effectvie as follows:
(1) Please using the High-temperature amylase of 6 u/g for the starch treatment ( which means using the 300ml Amzyme-HT in 1ton starch) under the condition of pH5.8-6.2, temperation of 102-103 centigrade and keep the temperation unchanged for 100 minutes, please cooling saccharify after the DE reach 13%-15%
(2) After finished the above step, please using the glucoamylase by 120U-140U/ml (based on the quantity of dry starch, which means adding 1.2-1.4ml Gluzyme-BI in 1kg dry starch) under the condition of pH 4.0-4.2, temperation of 58-62 centigrade and treatment for 35-40 hours, then the DE can reach 95%

(1) The above using method is only for reference, please take the related-experiments before mass production
(2) The DE means the reducing sugar (calculating as the glucose) accounted for the percentage of dry syrup, the DE more high which means the grade of glucose syrup more good
