Natamycin (pimaricin)

is a natural food preservative, used to inhibit the mould, yeast and other fungis growth.
It is reliable in application and safe to human body.
Natamycin 50% in lactose is made of 50/50 blend of lactose and natamycin for dairy and baked food etc.
APPLICATIONS
1.Application in dairy produce:
Adding 5~10mg/kg natamycin to yoghourt, It can prevent the growth of fungis and prolong shelf life to 4 weeks.
The natamycin 50% in lactose can also be used in cheese. It can prevent the growth of leaf mould. The methods are as follow:
Means of dipping: Dipping cheese in the 500ppm natamycin 50% in lactose liquid long as 2~4min.
Means of spraying: Spraying equably the surface of cheese using 200~300ppm natamycin 50% lactose liquid.
2.Application in bread and other baked foods:
When 300~500ppm natamycin 50% in lactose liquid is sprayed on the surface of bread,cake and other backed foods and dough,it can well prevent the growth of leaf mold and maintain the original taste of food.
3.Application in Guangdong flavor mooncakes:
The surface of cake and yolk soon go moldy under ordinary conditions.Insufflating the natamycin 50% in lactose in the cake surface can prevent the growth of leaf mold in surface and acceding it directly to sweetened bean paste,lotus paste,Chinese date paste stuffing or dipping yolk in it can prevent the growth of leaf mold in stuffing.
