Description of Polysaccharides

Polysaccharides are structures of polymeric carbohydrate, formed of glacosidic bonds repeating units (either mono- or di-saccharides) joined together by . These structures are often linear, but may contain various degrees of branching. Polysaccharides are often quite heterogeneous, containing slight modifications of the repeating unit. Depending on the structure, these can have distinct properties from their monosaccharide building blocks. They may be amorphous or even insoluble in water.

The mushroom naturally grows on the stumps of the Chinese Hackberry tree, called enoki in Japanese, but also on some other trees as for example mulberry and trees. There is a significant difference in appearance between the wild and the cultivated mushrooms. Cultivated mushrooms are not exposed to light resulting in a white color, whereas wild mushrooms usually have a dark brown color. The cultivated mushrooms are grown in a high CO2 environment to produce long thin stems, whereas wild mushrooms produce a much shorter and thicker stem.
