Benefits of Parboiled Rice 

 

Overview

Parboiling of rice -- a process that some historians trace to ancient India -- consists of soaking, briefly pressure steaming and drying rice prior to milling. Parboiling drives beneficial nutrients from the bran into the grain. Parboiled rice is close to brown rice in nutritional structure, but is easier to digest. Parboiled rice is not widely available in supermarkets, but consumers should be able to locate it in specialty stores.

Better Nutrition

The parboiling process makes the rice nutritionally superior to unconverted, i.e., not parboiled, white rice. B vitamins, thiamine -- a vitamin of the B complex that is important for good metabolism and nerve function, and the essential human nutrient niacin in the rice bran are moved into the grain before the bran is disposed of by milling. Parboiled rice has 80 percent of the nutritional value of brown rice.

Easier Digestion

Parboiled rice is easier to digest than brown rice. The starch remaining in the grain after parboiling is in a gelatin form, which makes it more digestible than brown rice.

Lower Glycemic Index

The glycemic index is a scale that measures the time it takes for the body to turn food into sugar. Food that is high on the index converts quickly to sugar and that can cause a "spike" in the sugar level, which is unhealthy for people with diabetes. The lower index of parboiled rice, compared with unconverted white rice, makes parboiled rice a good option for anyone with diabetes.

Quicker to Prepare

Parboiled rice requires slightly more time for cooking than unconverted white rice, but nearly half the time as brown rice. This quality makes parboiled rice attractive for cooking at home.
