Details

Ethyl maltol is a kind of safety and nontoxic, good-applied efficient, small additional quantity food additives, is widely used in food, beverage, flavor and fragrance, fruit wine, tobacco etc, to improve the sweet taste. Specially used in dessert to improve the sweet taste. And it can also extend the storage life.

 

Properties

 

White powder, acicular or granular crystals, with the sweet & coke aroma of fruit-like, very soluble in hot water, 1g this product can dissolve in about 55ML water, 10ML ethanol (95%), 17ML propylene glycol, 5ML chloroform. This product in 90 degrees Celsius can melt, and it turns purple with chloride-ferric chloride. In the process of production, it is often prepared in accordance with the solubility solution.

Product function

 

Increase the fragrance and the sweet taste, cause the fragrance synthesis, fragrance improvement, restrain the acidic and bitter taste, and eliminate fishy smell and the irritating quality. 

 

1)Broad-spectrum and enhance aroma: Enhance person's sense of taste and the sense of smelling regarding the fragrant sensitivity, a small amount existences of Ethyl Maltol in food, can make the aroma of the original be more prominent and more mature.

2)Flavor blending and flavor fixing: When it is used to make different essences as basic notes of flavor, it mixes with those rough odors in foods to improve the scent quality of low-grade foods.. 

3)High flavor improvement:

A. Improve the performance of food materials. Food material can not ensure the stability of each batch, thus, affect the final quality of the product. The addition of functional EM could cover the removal and miscellaneous materials taste, smell very well, and can reduce the maximum difference between the various raw materials themselves.

B. Coordinate the overall flavor of products. Because the flavor of food is various, if not choose the right seasoning and master proper proportion, It can not achieve the desired results. Application examples

1. Applying EM during meat processing can make meat appear in pink color without using color developer, the nitrite (It is due to the complication reaction between the EM and the iron ion in meat).

2. Canned products: EM is directly dissolved in sauces.

3. In pharmaceutical industry, it can reduce the bitter taste of Vb in different oral vitamin tablets. It also applies to remedy medicine.

4. With 5-200ppm of EM applied in feedstuffs, livestock gains weight by 25% -29% comparing with other feedstuffs without EM application.

5. It evokes and increases seed germination when applied in seed dressing. In addition, it can improve the light sensitization of sensitive films.

 

Usage

 

Ethyl maltol dissolved in hot water first, or organic solvents paired 5% of the stock solution, then the concentration of added food formula, usually add in drinks and wine with flavors together in production process later period.

 

As Ethyl Maltol's color will turn yellow when it meets alkali, those foods which are not expected to change to yellow color shall be avoided to mix with alkali nous raw and auxiliary materials. When applied to acidic foods, mixed with other aromas, it can restrain the acidic and bitter taste, can improve aroma and sweat flavor significantly. Those aromas will gradually get diminished when PH value increased.
